Brueck's Shrimp Egg Rolls

Make your favorite take-out dish right at home – baked or fried! Make a big batch today and freeze as needed for later!



Ingredients
  • 1 cup vegetable oil
  • 1 pound medium shrimp, peeled, deveined and roughly chopped
  • 3 cups coleslaw mix
  • ½ cup bean sprouts
  • 1 rib celery, diced
  • 2 green onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon reduced sodium soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon sesame oil
  • 1 teaspoon Sriracha, optional
  • 18 egg roll wrappers

Instructions
  1. Heat vegetable oil in a large skillet or Dutch oven over medium high heat.
  2. In a medium bowl, combine shrimp, coleslaw mix, bean sprouts, celery, green onions, garlic, soy sauce, oyster sauce, ginger, sesame oil and Sriracha.
  3. Working one at a time, place shrimp mixture in the center of each wrapper. Bring the bottom edge of the wrapper tightly over the filling, folding in the sides. Continue rolling until the top of the wrapper is reached. Using your finger, rub the edges of the wrapper with water, pressing to seal. Repeat with remaining wrappers and shrimp mixture.*
  4. Working in batches, add egg rolls to the Dutch oven and fry until evenly golden brown and crispy, about 2-3 minutes. Transfer to a paper towel-lined plate.
  5. Serve immediately.

Notes
  • *TO FREEZE: Place egg rolls in a single layer onto a baking sheet; freeze until firm, about 2 hours. Transfer to a Ziploc bag; freeze up to 3 months. To bake from frozen, increase baking time by 5-10 minutes.
  • *TO BAKE: Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray. Place egg rolls onto the prepared baking and coat with nonstick spray. Place into oven and bake until golden, about 10 minutes.

5-Layer Mason Jar Taco Dip

Everyone's favorite dip in mason jar form!  Everything is layered in individual jars so it makes for the easiest serving!  Loaded with taco beef, refried beans, guacamole, pico de gallo, and cheese! Ingredients 1 tablespoon olive oil 8 ounces ground beef 1 tablespoon taco seasoning 2 9-ounce cans Fritos Bean Dip, Original Flavor, warmed 1 cup guacamole, homemade or store-bought 1 cup pico de gallo, homemade or store-bought 1 cup shredded cheddar cheese 1 12.5-ounce package TOSTITOS Yellow Corn Bite Size Instructions Heat olive oil in a large skillet over medium high heat. Add ground beef, and cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks; stir in taco seasoning. Drain excess fat. Divide ground beef into 4 (16-ounce) widemouth glass jars with lids. Layer with refried beans, guacamole, pico de gallo and cheese. Serve with TOSTITOS Yellow Corn Bite Size.

The best crowd-pleasing chicken bites wrapped in crisp-tender bacon and smothered in a smoky-sweet BBQ sauce! Ingredients 1 2-ounce pouch KC Masterpiece® Original BBQ Sauce Mix & Dry Rub ¾ cup pineapple juice 1 tablespoon Sriracha 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes 8 slices bacon, cut into thirds ¼ cup brown sugar, packed 2 tablespoons chopped fresh chives Instructions Preheat oven to 400 degrees F. Line a baking sheet with parchment paper or a silicone baking mat; set aside. In a small bowl, combine together KC Masterpiece® Original BBQ Sauce Mix & Dry Rub, pineapple juice and Sriracha; set aside. Working one at a time, wrap each chicken in a piece of bacon. Dredge each chicken in the brown sugar, pressing to coat. Place chicken seam side down onto the prepared baking sheet, using toothpicks to secure if needed.
