Brueck's Ice Water

Brueck's Ice Water is a simple cocktail that usually includes gin, vodka, lime juice, triple sec, and lemon-lime soda. Ingredients 1 1/4 ounces vodka, like J. Rieger's Premium Wheat Vodka 3/4 ounce riesling, preferably the kabinett style 1/2 ounce chamomile syrup (recipe follows) 3/4 ounce lime juice, freshly squeezed 2 ounces sparkling mineral water, like Topo Chico or Jarritos Mineragua Garnish: lime wheel Steps Combine all ingredients except sparkling mineral water in a cocktail shaker filled with ice. Shake for 15–20 seconds, until well chilled. Pour sparkling mineral water in a highball glass, and strain the mixture from the shaker over it. Add fresh ice. Garnish with a lime wheel. Mexican Corn Dip

Yield:   4   servings   Prep:   5 minutes   minutes Cook:   10 minutes   minutes Total:   15 minutes   minutes Ingredients 2 tablespoons unsalted butter 4 cups corn kernels, frozen, canned or roasted 1 jalapeño, seeded and diced 3 tablespoons mayonnaise 2 tablespoons crumbled cotija cheese 2 tablespoons chopped fresh cilantro leaves ½ teaspoon chili powder 1 clove garlic, pressed 2 tablespoons freshly squeezed lime juice Equipment Cast Iron Skillet Instructions Melt butter in a large cast iron skillet over medium high heat. Add corn kernels and jalapeño, and cook, stirring occasionally, until cooked through and slightly charred, about 8-10 minutes. Stir in mayonnaise, cotija, cilantro, chili powder, garlic and lime juice. Serve immediately, garnished with cilantro, if desired.

Zucchini Corn Pancakes

These easy pancakes are the perfect side dish or appetizer to any meal. And best of all, they don't even taste "healthy"! Ingredients 1 pound zucchini, grated 1 teaspoon salt 1 cup corn kernels, frozen, canned or roasted 4 large eggs, beaten ½ teaspoon dried basil ½ teaspoon dried oregano ¼ teaspoon garlic powder Kosher salt and freshly ground black pepper, to taste ½ cup shredded cheddar cheese ¾ cups all-purpose flour 2 tablespoons olive oil Instructions Place grated zucchini in a colander over the sink. Add salt and gently toss to combine; let sit for 10 minutes. Using a clean dish towel or cheese cloth, drain zucchini completely.
